A fantastic Friday afternoon treat, that will hopefully last the weekend through.
Chocolate Fudge Brownies
200g dark cooking chocolate
250g butter
4 eggs
2 cups sugar
1 tbsp vanilla
1/2 cup plain flour
Preheat oven to 150°C/300°F. Line a rectangular baking pan with baking paper.
In a saucepan gently melt the chocolate and butter, stirring over a low heat until all blended and smooth.
In a large bowl beat eggs for about 4 minutes until they are a light yellow colour. Add sugar continue to mix until all combined. Add vanilla, melted chocolate and butter, mix until smooth. Add flour and mix until combined.
Pour batter into the lined baking pan. Bake in a slow oven for approx 45-55 minutes. The brownies should develop a light crust on top but should be moist in the middle. Best not to over cook.
Are most delicious served warm with your favourite vanilla ice cream.
